Big News: New Restaurants Set to Open in Albany and Latham!

A well-known Capital Region restaurant group, The Rojas Corporation, is expanding its reach with plans to open two new eateries in Albany and Latham.

Owned by Roy Rojas, the group will introduce La Polleria Peruvian Rotisserie and Taqueria at 216 Lark Street in Albany.

At the same time, Las Margaritas Mexican Cantina will open its doors at 710 Loudon Road in Latham.

The Rojas Corporation already has an impressive portfolio of restaurants, including Margarita City in Colonie, La Fiesta in Clifton Park, and another Las Margaritas Mexican Cantina in Slingerlands.

The new Las Margaritas in Latham will be the brand’s second location, taking over the building that once housed Sushi X on Loudon Road.

Leah Duell, the marketing coordinator for The Rojas Corporation, shared that La Polleria Peruvian Rotisserie and Taqueria will offer a range of flavorful dishes.

The menu will primarily feature Peruvian-style rotisserie chicken, served with various seasonings and sauces, alongside sides like salads and fries. Patrons can also enjoy street-style tacos, making the eatery a great option for a quick and delicious meal.

While some indoor seating will be available, the restaurant’s main focus will be on takeout service, and it’s expected to be open late into the night.

Duell also mentioned that the opening of Las Margaritas in Latham has faced some delays as the team is still completing a few additions to the space, including visual enhancements. The new location will share a lot in common with the Slingerlands restaurant but with its unique touch.

Customers can expect different food and drink specials, as well as an event space for gatherings. A patio area is also planned, and it will be ready by next summer.

The Las Margaritas menu is packed with all the favorites you’d expect from a Mexican cantina. Offerings include tacos, nachos, burritos, quesadillas, enchiladas, fajitas, and even brunch options. The full menu is available online on the Las Margaritas website for those eager to explore it.

Looking ahead, The Rojas Corporation aims for a November opening for La Polleria Peruvian Rotisserie and Taqueria and Las Margaritas in Latham.

Duell hinted that more restaurant openings could be on the horizon. The company may also launch a food truck next summer, further expanding its reach in the Capital Region.
